Chicken Shawarma Bowl at Home: Yogurt-Marinated Thighs, Rice and Garlic Sauce

Bowl of sliced grilled chicken with grains, peas, broccoli, cucumber and zucchini

A chicken shawarma bowl at home takes about 40 minutes of real work: boneless thighs marinated in yogurt, lemon, garlic and a shawarma spice mix, roasted hot until the edges char, then sliced over turmeric rice with a cucumber-tomato salad and a Greek yogurt garlic sauce. Four bowls come to about 665 calories and 58 grams of protein each, which is a fraction of the calories in most takeout plates with the same amount of chicken.

Method

  1. Marinate. Mix all the marinade ingredients in a bowl or zip-top bag, add the thighs and coat well. Give it at least 1 hour in the fridge; overnight is better. The yogurt’s acidity tenderizes the chicken and helps it char.
  2. Make the sauce. Stir the yogurt, garlic, lemon and salt together, adding water a teaspoon at a time until it drizzles. Refrigerate.
  3. Cook the rice with the turmeric and a pinch of salt.
  4. Roast the chicken. Heat the oven to 230°C (450°F). Spread the thighs flat on a parchment-lined tray and roast 20 to 25 minutes, then broil 2 to 3 minutes for charred edges. They’re done at 74°C (165°F), per Health Canada’s cooking temperatures. On a barbecue, grill over medium-high for 5 to 6 minutes per side.
  5. Toss the salad: cucumber, tomato, onion and parsley with a squeeze of lemon and salt.
  6. Slice and build. Rest the chicken 5 minutes, slice thinly, and divide over the rice with the salad and sauce. Add pickled turnips or hot sauce if you like.

Carbs land at about 69 g and fat at about 16 g per bowl. On a lighter day, use half the rice and add shredded romaine: the bowl drops to about 530 calories with almost the same protein.

Make it a weeknight meal

Marinate the chicken on Sunday night, then cook it Monday; it takes the same time as ordering in. Leftover chicken goes into wraps for lunch with a whole-wheat pita, lettuce and the garlic sauce. If you want chicken that needs even less attention, slow cooker pulled chicken can take a shawarma spice mix instead of salsa.

Swaps

  • Chicken breast: leaner, about 3 g less fat per bowl; roast 2 to 3 minutes less so it doesn’t dry out.
  • Beef or lamb: thinly sliced sirloin works with the same marinade and cooks in 6 to 8 minutes under the broiler.
  • Low-carb: replace the rice with a big bed of shredded lettuce and add a spoon of hummus.
  • Grill it: in summer, skewer the marinated thighs and cook them alongside the high-protein BBQ menu.

When you’d rather order out

Shawarma shops are on almost every main street in the GTA, and you shouldn’t have to give them up. The difference is in how you order. Our guide on what to order at Toronto shawarma, pho and sushi spots shows how to keep a takeout plate close to this homemade bowl.

Questions people also ask

What spices are in chicken shawarma?

The common base is cumin, coriander, paprika, turmeric, black pepper and a little cinnamon or allspice, with garlic and lemon. Ready-made shawarma spice blends are sold at most Middle Eastern grocers and many supermarkets.

How is homemade shawarma different from a takeout plate?

Mostly in the sauce and portion size. Takeout garlic sauce (toum) is traditionally garlic whipped with a lot of oil, and plates often come with a large rice portion and fries. A yogurt-based sauce and a measured rice portion cut the calories substantially while keeping the protein.

Can I make shawarma chicken ahead of time?

Yes. Marinate it up to 24 hours ahead. Cooked chicken keeps 2 to 3 days in the fridge; store the sauce and salad separately so the bowl doesn't go soggy.
